Healthy Eating (March): Chocolate Chip Coconut Cookies

Do you have a sweet tooth that just won’t stop aching? Do you drool every time you see a donut? Well, fret not, sugar- cravers of the world, Royal City Physio has the answer for you! This is the first of our ‘Healthy Eating’ posts, where we share a simple recipe that will encourage you to maintain your healthy lifestyle without sacrificing taste. 

 

March is when the rain begins to change into a drizzle, where you savour those little bits of sunshine with an afternoon hike and by doing so, you work up a bit of an appetite. This time-saving recipe of ‘cookies’ only takes twenty minutes to bake! That way, you won’t have to wait as long to get it into your rumbling tummy. This month’s featured recipe is for ‘Chocolate chip Coconut Cookies’. 

 

What you’ll need:

 

2 large Bananas (Mashed)

 

1 3/4 cup of Oats

 

White Chocolate Chips 

 

Shredded Coconut

 

See? Only four ingredients, most of which you might already have lying around the house. That’s a great place to start when determining whether a sweet recipe is worthwhile. The less ingredients ensures better taste and the healthier it is for you.

 

When first trying this recipe, we were shocked to find that bananas (a great source of potassium) works so well as a binder in baking, plus the natural sweetness of it kept us from being tempted to add sugar. Try using it as binder substitute in other recipes!

 

The steps:

 

1. Pre-heat your oven to 350.

 

2. Mash your two large bananas with fork or potato masher. 

 

3. Mix in 1 3/4 cup of oats to mashed bananas, make sure they are evenly distributed to avoid crumbling.

 

4. Add shredded coconut and white chocolate chips to mix. As it is already thick, the easiest way to do this is by folding them in.

 

5. Prep cookie sheet with parchment paper so cookies don’t stick to pan.

 

6. Use spoon (or ice cream scoop) to make small ‘cookies’.

 

7. Bake in oven for 15 - 20 minutes.

 

8. Take out of oven and cool.

 

9. Enjoy!

 

And there you have it, a delicious and simple cookie recipe that you don’t have to feel guilty about. Now, we certainly don’t recommend devouring them in one sitting but there’s nothing wrong with a daily indulgence. To keep them at their freshest, store them in the fridge where they’ll remain sweet and sugary until you’re ready to snack on them.
